Al Majdal Agricultural Company
is specialized in producing
extra virgin olive oil from the
olive plantation of the Mango
family estate. The estate is
situated in Majdal on the hills
of Gilead close to the Roman
town of Gerasa. (Jerash)
The estate was acquired in the
mid 1940’s and has been a family
run farm ever since, consisting
of a cold press and a variety of
olive trees that are cultivated
without the use of chemical
fertilizers or chemical
pesticides and are mostly rain
irrigated.
The olives are harvested
manually at the right stage of
maturity, which usually
coincides with the month of
October. They are sorted and
placed in ventilated crates in a
cool sheltered area for no
longer than two days before
pressing.
The press is one of the oldest
modern presses in Jordan. It was
established in 1968.
It is a cold press in which the
olives are washed, ground to a
paste and put onto press sheets,
which are then layered and
pressed. The resulting liquid is
simply centrifuged to separate
the oil from the remaining
liquid.
The olive oil is non-filtered
and cold pressed. Being
non-filtered may cause some
sedimentation at the bottom of
the containers. The olive oil is
not filtered to maintain its
natural qualities and character.
The extra virgin quality to the
olive oil is naturally attained
and not through the use of
acidity reducing machines as is
common in most modern presses.
Olives that are pressed at the
beginning of our harvesting
season yield oil that is greener
in colour and sharper in flavour.
Towards the end of the
harvesting season (end of
December), when the olives tend
to be mostly black, the oil
tends to have a honey colour
with a more mellow flavour. With
time, both oils settle, mellow
down and the difference in their
flavour becomes subtle.
The
olives are pressed in a way that
produces an extra virgin olive
oil naturally and not by using
acidity reducing machines as are
used in many modern presses
today. In these acidity-
reducing machines the olive oils
are made extra virgin oils with
low acidity using an unnatural
method. Because olive oil is
extremely sensitive to heat and
light this unnatural method
affects the beneficial qualities
of the olive oil.
It is a pleasure and a great
satisfaction not only to be able
to cultivate our olive trees in
a natural and chemical free way,
but also to be able to harvest
them in the best way possible
and to press them in our own
cold press. This gives us a
unique control over all aspects
that are involved in the
production of such an
exceptional masterpiece as olive
oil.
